Some times we have more Chapati/Roti left and we don’t understand what to do with it. So this can be done as a breakfast option. It is very tasty and I too love it. It can be prepared in very little time and requires a few ingredients which are readily available in our Indian kitchen. I have learnt this from my mom and our mothers are indeed great cooks. They not only teach us great recipes but also teach us what to do with left over things. That’s the beauty of Indian culture. Recipes passed over from generation to generation. Every child grows eating food made by their mother and they are their teachers in all aspects of life. If you also have left over Roti in your house do try to make this and you will surely love it…
What do we need :-
2-3 Chapatis/rotis, shredded into small pieces
1 Large onion, finely chopped
1 Medium Tomato, finely chopped
1 tsp Cumin (jeera) seeds
½ tsp Mustard (rai/sarson) seeds
3-4 Green chillies, finely chopped
6-7 Curry leaves (Kadipatta)
1 tsp Turmeric powder (haldi)
1 tsp Garam masala powder
Coriander, finely chopped for garnishing
1 tbsp oil for tempering
How do we do it :-
1 Heat the oil in a kadhai. When the oil is hot add the mustard seeds and wait till they splutter. Then put the cumin seeds and the curry leaves.
2 Add the chopped green chillies and sauté for a minute. Then add the chopped onions and sauté till they become pink in colour.
3 Put the turmeric powder and the chopped tomatoes and sauté till the tomatoes are cooked or mushy.
4 when the tomatoes are done add in the shredded chapatti/roti, salt to taste and garam masala and stir everything .
5 Keep it in the kadhai till it becomes warm and all the ingredients are mixed well.
6 Serve hot.

You can add your choice of vegetables to make it healthier.
